Not crazy about the new UI(the separate detachable windows), is there an option to use the classic UI?

No. We tried to do just that but the new UI broke too much of the old way of doing things. Sorry.
PS Check out the new manual. It does describe most of the features of the new dialog system. For instance you can open a force data dialog and then click other units and their data will automatically update in the opened force data view. SO it works the same as with the old sidebar in that regard. It only works for the first force data dialog. You can open multiple ones of these by holding down the shift key when you select the dialog from the context menu. The same works for the Edit Task and View Task dialogs.
