I would like greater control options at all levels of supply, even down to tinkering with individual unit supply priorities. I read that during the Ardennes offensive individual riflemen with Stg44 where only issued with 80 rounds of ammo.I recall getting 6 full,20 round mags and 120 loose rounds for my SLR rifle back in the day. This level of detail is what I love to mess with .
I think your level of detail is going a bit to far for the scale of this game.
I would love to see more control over the logistics at Regimental base level and above though.
I think it would add a lot to the game, to be able to escort a supply convoys to isolated positions, deep penetrations and encirclements, but have the AI handle supply to less problematic locations.
