6.4 Stealth Movement says a SM-capable unit can move without being automatically spotted, "even if adjacent to an enemy unit."
But the rule goes on to say a SM-capable unit is automatically spotted if it moves into open terrain in the LOS of a Good-Order enemy unit.
At night, in open terrain, that would be a 2-hex LOS.
I'm writing a scenario and trying to simulate sneaking up on a lone sentry at night and silently killing him.
If the sentry is surrounded by open terrain, then is there no way to rush him and melee him without first being automatically spotted in those approach hexes?

Just wondering if I need to write a special scenario rule to handle this, or whether existing core rules are enough to do the job.

You should consider that Spotting rule is written to handle the awareness of alerted soldiers on a battlefield. To handle your nice idea, you should write some special rule to cover sleeping sentries or any situation of quietness before the storm!

Yeah you'll need to do this.

Someone suggested this:
How about you designate that your units can stealth in open terrain at half speed until an alarm is sounded, either from a spotting attempt or a die roll when adjacent?

I was thinking of something more like this:
On Allied impulses, Stealth-move in open in LOS of a sentry to Melee him is not automatically spotted. Instead, 1d6 roll for each open hex in Sentry's LOS entered en route to his hex; Sentry spots and sounds alarm on roll of 3 or less. On Axis impulses a sentry can make Spotting Checks as normal.

Thoughts?

That sounds like a good place to start. You can then adjust, if necessary, the 3 or less if it happens too much or too little... or if you want your sentries to dull/sleepy or alert/eagle eyed.
Might make for a good balancing tool for new players/veterans as well.
